19. Ajiaco

Originally from Bogota, Ajiaco is a stew made with potatoes and chicken. Easy to make, it’s a refreshing and filling meal option.

Serving size: 4

Cooking time: 30 minutes

Ingredients:

2 chicken breasts

1 onion, chopped

2 teaspoons garlic, minced

2 tablespoons oil

5 cups chicken broth

2 lb potatoes, chopped 3 whole corn

1 bunch cilantro leaves

Salt and pepper to taste

For topping

2 small avocados, chopped

1 bunch chives, chopped

½ cup sour cream

½ cup cilantro leaves, chopped

Instructions:

Add the onion, garlic, salt, pepper and chicken to a baking dish and mix till well combined.

Refrigerate for 6 to 12 hours.

Add oil to a heavy saucepan and add the chicken.

Brown it on all sides and lower the temperature.

Cook for 40 minutes.

Transfer it to a plate and cut it into strips.

Add the potatoes, corn and broth and season with salt and pepper.

Add cilantro leaves and cook for 15 minutes.

Serve warm with a sprinkling of avocados, chives, cilantro and a dollop of sour cream.
